Creamy Poblano Avocado Pasta

Everyone loves green smoothies… but what about green pasta?


Most of the time when you see a dish labeled “creamy,” it’s better to steer clear as its likely to be loaded with calories. This pasta’s creamy goodness comes mostly from the avocado, full of heart healthy omega 3 fats that we all need to be getting more of!

Creamy Poblano Avocado Pasta

Serves 6

  • 1 teaspoon extra virgin olive oil
  • 1 medium poblano pepper, diced
  • 3 cloves garlic, minced
  • 1 box of whole wheat spaghetti noodles
  • 1 and 1/2  avocados, peeled and pitted
  • Juice from one small fresh lime
  • 1/3 cup chopped fresh cilantro
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons whole wheat flour
  • 1 cup milk
  • 1 cup shredded Pepper Jack cheese
  • Cilantro for garnish
