Protein Banana Nut Muffins – heavenly!

banana.nut.protein.muffinsI made these yummy muffins as a treat for the ladies at Breathe Pilates Studio. As promised, here is the recipe– They’re only 179 calories per muffin with 5 grams of protein!

Banana Nut & Honey Protein Muffins

Makes 16 muffins

  • 1/2 cup chopped walnuts
  • 1/3 cup plus 1 tablespoon honey, divided
  • 1 teaspoon cinnamon
  • 1 and 1/2 cups whole wheat flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick unsalted butter, softened
  • 2/3 cup protein powder (I used chocolate)
  • 2 large eggs
  • 2 overripe bananas
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  1. Preheat the oven to 350°. Spray two muffin tins with non-stick cooking spray or line with paper liners. In a small bowl, toss the nuts with 1 tablespoon of the honey and cinnamon until the nuts are evenly coated and set aside.
  2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
