Happy 4th of July!!!!!!!

Hope you are enjoying a sunny 4th – unlike our friends in North and South Carolina. Our prayers of safety certainly go out to all of them.  And our thanks and prayers also go out to all those who hare fought or are fighting for our freedom.

For those of you who are planning to grill for family and friends – healthy grilling is really easy. Just cut the sides like potato salad and chips – and add grilled veggies (even corn) and cut veggies for dips. Of course my nephews love chips, but to them it’s only a treat (you see my sister-in-law has taught them to eat healthy). If there is ranch dip and carrots, celery and cucumbers the kids don’t really miss the chips.

All you have to do to make your cookout healthier is alter the menu – instead of burgers and hot dogs (which scream for buns and chips) grill, chicken or seafood, with veggies (squash, carrots, onions, peppers and mushrooms), season with lots of herbs (and garlic if you like it). Make a rub for the chicken and seafood (less oil than baste) that includes some chili powder, ground mustard, salt, pepper, onion powder, etc – check your seasonings to make sure there’s no added sugar in the ingredient list. For dessert, think about watermelon and bowls of berries with whipped cream. (you could add an angel food cake if something more substantial is desired).

The whole family can feel better about their day – less groggy and fewer bouts with indigestion. Oh yeah – make sure to have a bottle of water for every beer. You’ll drink less and be able to make it through the day without playing the fool – or getting dehydrated.
